Need Some Recipes

Dear Readers,

I love to cook. I love to try new recipes and make them just right. However, there are two dishes whose perfection has eluded me for years. One is vegetarian baked beans. The other is Spanish rice. I would love to get a recipe that uses whole grain rice, but I'd be satisfied with a scrumptious white rice recipe.

So, if you have any great recipes for either of these dishes, do share them! - Nanette

Here's a non-traditional Spanish Rice Recipe. Garnish with Spanish style olives if you wish.
Makes a bunch.
2 cups brown rice/long grain white rice mix (can also mix in orzo, too)
3 c. water
1 T. vegetable bouillon mix
1 medium onion, chopped fine
1T. olive oil
1-14 0z. can diced tomatoes (or 12 oz. H20 + 1T. tomato paste + 1 fresh tomato, diced
1 T. dehydrated green pepper

Saute in olive oil the rice and onion until the onion is limp. Add rest of ingredients, bring to a boil, then cover and reduce heat to a simmer. Uncover and stir about 10 minutes through. Burns easily, watch.

Enjoy! We usually call this Mexican rice although I don't add the somewhat ubiquitous chili powder or cumin. What I call Spanish Rice is the flavored rice use in Paella (with Saffron and seafood and chicken stock).
